I have eaten Yuxin cake in Sichuan, and I can't forget the sweet and waxy texture, but I have never made it because of the lack of a recipe. Occasionally, I read Chinese cooking magazines and found out the recipe for this delicacy, so I hurriedly pulled out the grass. This delicacy is made of steamed sweet potatoes mixed with glutinous rice flour and a little flour as the outer skin, wrapped in the heart of lotus paste, dipped in bread crumbs and fried. The sweet potato I used is the white stuffed sweet potato from Bawang Supermarket. This sweet potato has the taste of dried noodles, similar to the taste of chestnuts. Because sweet potatoes are relatively dry and will not form a lump after adding glutinous rice flour, I added some steamed pumpkin soup , And then dipped coconut paste on the outside, so that the flavor is richer. After making it, I feel that this kind of local specialties is not difficult to make at home.

Yuxin Cake

1. This is the white fleshy sweet potato from Bawang Supermarket, wash it

2. Cut in half and steam for 25 minutes until cooked

3. Peeled and crushed into mud with a knife

4. Put the mashed sweet potato, glutinous rice flour, flour, and sugar into the bowl

5. Knead evenly, because this sweet potato is very dry, it is still very loose after kneading, and will not form a lump

6. The pumpkin was steamed when the sweet potatoes were steamed, and the mashed sweet potatoes were formed into balls with the soup inside

7. Add pumpkin juice to the kneaded sweet potatoes and use 50 grams. If there is no pumpkin juice, you can directly add water to form a dough. If you use sweet potatoes with a lot of moisture, you don't need to add soup.

10. Divide the sweet potato dough into 8 doses, and divide the lotus paste filling into 12 g doses

15. Oil temperature is 40% hot, deep fry

16. Fry on medium heat until golden in appearance. Do not use high fire to fry, and the oil temperature should not be too high, otherwise it will explode.

17. Take it out and use absorbent paper to absorb the surface oil and you can enjoy it

18. Break one, the inside is sweet lotus paste filling, the outside is glutinous sweet potato, it's delicious

Tips:

1. If the sweet potato used has a lot of moisture, you don't need to add the soup or add less, whichever can be formed into a dough.
2. When frying, do not use high fire to fry, and the oil temperature should not be too high, otherwise it will not be easy to deep-fry and will burst easily.
3. The lotus seed paste filling I used can also be replaced with your favorite filling core
