27 Baking Diary-cranberry Matcha Story

1. Ingredients: Prestige Cake Ingredients: 30g low-gluten flour, 5g matcha powder, 2 eggs, 16g salad oil, 16g fresh milk, 20g fine sugar (adding egg white), 10g (adding egg yolk). Decoration ingredients: 100ml animal whipped cream, dried cranberries, 3-5g white granulated sugar.

2. First make the awe-inspiring cake. Put the egg whites and egg yolks in a clean oil-free and water-free bowl. When the egg whites are beaten with an electric whisk until the fish-eye foam, add 1/3 of the white sugar, and continue to beat until thicker. When foaming, add 1/3 of the white sugar and continue to stir. When it becomes thicker, add the remaining white sugar. Whip until there is a small bend after lifting the whisk, you can put it in the refrigerator for later use.

3. Add white sugar to the egg yolk, beat it up, don't beat the egg yolk.

4. Add vegetable oil and milk to the beaten egg yolks and stir well.

5. Mix the matcha powder and flour, sift into the egg yolk, gently stir evenly, don't over-mix, so as to prevent the flour from becoming gluten.

6. Add 1/3 of the egg white to the egg yolk paste. Use a spatula to mix the egg white and egg yolk paste evenly. Don't let the egg white bubbles disappear.

7. Add the egg yolk paste to the remaining egg whites and continue to mix evenly.

8. Pour the mixed batter into the mold and smooth it out as much as possible. Before putting it in the oven, shake the mold twice, put it in the preheated oven, middle layer, upper and lower heat, 175℃, about 18 minutes.

9. In the meantime, start to whip the cream, add white sugar to the cream, whip well with an electric whisk, about 5-8 minutes.

10. Take out the tested matcha prestige cake, unmold, and cut out the shape you like with your favorite mold.

11. Put a layer of cream on the cake slice.

12. Put a few dried cranberries.

13. Squeeze another layer of cream.

14. Cover with a slice of cake.

15. Then squeeze a circle of cream on the cake slice and put a few dried cranberries in the middle.
