Put the drained glutinous rice on a steaming tray with steaming holes (you need to spread a layer of cloth (I use gauze) first, so that the rice will not block the holes in the steaming tray, and it will be easy to cook). , After the water is boiled, steam on medium heat for 20 minutes. If the rice feels hard to eat, you can sprinkle some water and steam it for a while.

The steamed glutinous rice needs to be spread until it is warm to about 35 degrees (a bit hot but not hot), add the sweet koji powder (you can add it in cold boiling water and mix well, then mix it into the glutinous rice) and mix well.

Put the glutinous rice mixed with koji into a container that has been blanched and dried in advance with boiling water, compact the glutinous rice, dig a small hole in the middle, and then sprinkle some koji around and on the hole, add a cup of cold water

Cover the lid, wrap it in a towel or cotton quilt, and leave it to ferment in a warm place, keeping the temperature at 29-31 degrees. It can be eaten after 24 hours. Note: 1. The materials and containers used for wine making must be clean, oil-free and water-free, otherwise the fermented rice will be moldy. If it is moldy, you can take out the mold and steam it for consumption. 2. The glutinous rice used to make sweet wine must be steamed. Once it was cooked with a rice cooker, it turned into vinegar instead of sweet wine.

If you want a strong wine taste, just open the lid for 3 or 4 days; if you don’t want the wine taste to be too strong, you can open the lid and enjoy it in 24-48 hours. The brewed sweet wine can be scooped out with a clean oil-free spoon and placed in a bottle. The longer it is left, the darker the color of the wine will become and it will become a real rice wine. This bottle of wine has been stored for a few months, the color has turned pale yellow, and the wine has a strong flavor. Drinking it in a small cup before going to bed will also help sleep.
