Bacon is a kind of Chinese cured meat. It is mainly popular in Sichuan, Hubei, Hunan and Guangdong, but it is also produced in other parts of the South. It is usually cured on the twelfth lunar month of the lunar calendar, so it is called "bacon."
As a meat product, bacon is not long-lasting. After the winter solstice, the bacon made before the cold is the longest and is not easy to change its taste. The bacon is stored at room temperature. When the taste is the most authentic before the third month of the lunar calendar, as the temperature rises, although the quality of the bacon remains the same, the taste will become throat-piercing. So after the third month of the lunar calendar, bacon cannot be stored at room temperature. The best preservation method is to wash the bacon, wrap it in plastic wrap, and place it in the freezer compartment of the refrigerator, so that it can be stored for a long time, even if it is three years or five years, it will not change its flavor.
The fragrant bacon stewed rice with seasonal vegetables is a perfect combination of staple food and various seasonal vegetables. It is simple and fast. It can be done with only a rice cooker. The meal is cooked in one pot. It is a delicacy suitable for lazy people.

Tips:
1. Bacon will produce oil, so just put a little oil in the wok to moisten the wok.
2. The bacon is salty, so use less salt. If the bacon tastes weak, you can add some salt. If the bacon tastes salty, you can soak it in warm water for a while in advance.
3. The "Claypot Rice" program I chose, the cooked rice has a layer of crispy rice at the bottom, which tastes particularly delicious.
