Melt the chocolate and butter, and mix well with the cream.

Cocoa powder is mixed with flour.

Separate the egg white and egg yolk. Add the egg yolk to step (1) and stir evenly, add 20 grams of white sugar and mix well until the sugar melts, then sift into step (2), mix into a thin paste and set aside.

Add 50 grams of sugar to the egg white in two times and beat out the sharp corners.

Stir the ready-to-use thin paste and whipped egg whites evenly, pour it into the mold, 165 degrees, 40 minutes.

Cool, cut into cubes, sprinkle with powdered sugar and serve.
