Remove the internal organs and clean the eel. After removing the head and tail, place the fish flesh on the fish bones and cut into pieces. Add rice wine, sugar, soy sauce, pepper, ginger juice or ginger and marinate for more than 30 minutes.

Cover the baking tray with tin foil (with the matte side facing up), spread a layer of cooking oil to prevent sticking, and layer the marinated eels on top. Put it in an oven preheated to 200 degrees, bake for 10 minutes, then turn it over, brush with a layer of marinated fish sauce, and sprinkle with white sesame seeds and continue to bake for 10 minutes.
