#aca Fourth Session Baking Contest# Making Pornographic Carrot Bread with Sunflowers

Prepare a carrot and an orange. Use 130 grams for chopped carrots and 80 grams for orange juice. Put in a food processor and add a spoon of about 10 grams of honey. Make it into carrot puree and take 130 grams for use.

Homemade Yeast: There are detailed instructions in my carrot bagel bread recipe. This is what I learned from a Taiwanese bread book. According to the author: it is the soul of my bread making. With it, the bread tastes soft and unique. I will feed once a week;

Prepare other ingredients, pour materials other than flour and salt into the basin, stir evenly and let it stand for a while, add high flour and salt, and stir into a floc;

Knead for about 20 minutes, pull it open to reveal the film, cover with plastic wrap and ferment at room temperature for one and a half hours, hand-dip the flour and insert it without sinking or shrinking, and the fermentation is complete;

Press and exhaust the dough and divide it. The total weight of the dough is about 500 grams. Divide it into two large pieces. Take one large piece and divide it into four equal parts. Each portion is nearly 50 grams. Make the first layer of sunflower and divide the other half of the dough into 50 pieces. The remaining 150 grams of dough is divided into four equal parts with 37.5 grams each. Make the second layer of sunflowers, round them separately, cover the wet cloth and proof for 15 minutes;

Shaping: leave a 50g dough, and squash the rest;

First make the first layer of sunflowers. Use four 50 grams of dough and roll one into a 6-inch circle. Brush a layer of olive oil on the top, then roll the remaining three;

After brushing the oil in the middle of the second layer, fold it up, and cut it into rice characters with a knife, as shown in the figure, without breaking the four sides;

Turn from the middle to the outer edge;

Do the second layer again, with the same steps as the first layer, and roll it into a 5-inch circle;

After brushing the oil between the two layers, stack up;

Cut into rice

Put the first layer on the baking pan covered with tin foil, and put the second layer in the first layer;

The second layer is turned to the outer edge, staggered from the first layer;

For the last 50 grams of dough, add a piece of cheese and red bean cubes. Prepare the red bean cubes in advance. Put them in the refrigerator and take them as you use them. Wrap them with the mouth down;

Put it in the center of the sunflower and arrange the shape;

Preheat the oven and bake the lower layer at 150°C and 160°C for 28 minutes, and cover with tin foil in time when the middle color is satisfied.

Tips:
1. The water content of the carrot puree is different. The flour needs to be added little by little, stirring while adding. I prepared 250 grams, but actually only added 200 grams.
2. Master the oven temperature and time by yourself.
3. Don't roast too deep in color.
