Wash the eel and put it on a plate, pour in rice wine, salt and black pepper, and marinate for about 15 minutes.

Put the marinated eel on the kitchen paper and blot it dry.

Place the eel on the grill, skin side down, and put a baking sheet wrapped in tin foil underneath.

Preheat the oven to 100 degrees, and bake the front and back for about 5 minutes.

Adjust the oven to 200 degrees, and bake the front and back for 10 minutes.
6.
Finally, test the fish skin down for another 5 minutes.
