Afternoon Refreshment-red Bean Sikang (refer to Jun’s Recipe)
1.
Mix low-gluten flour, baking powder and salt through a sieve
2.
Mix the sugar, softened butter and sifted flour, and knead it with your hands until the butter and flour are completely mixed.
3.
The kneaded flour is in a granular state
4.
Add whole egg liquid and milk to the flour and knead it into a dough
5.
Pour the red beans and knead gently
6.
The kneaded dough has a bright surface and does not stick to your hands. Don't knead the dough too much, so as not to generate too much gluten and affect the taste
7.
Use a rolling pin to roll the dough into a 2cm thick dough
8.
Press out a mold on the dough, then put it on a baking tray lined with greased paper, and brush a layer of egg yolk on the surface
9.
Put it in a preheated 180 degree oven and bake for about 15 minutes until the surface is golden brown.
10.
Just wait for it
11.
It is printed with a biscuit mold for more convenient eating
Tips:
Stir the red beans and flour, don't knead too much, otherwise it will become gluten
