Aged Pork Knuckles

One fresh pork knuckle, cut into chunks, wash and set aside.

Boil the pork knuckle with hot water for 3 minutes to remove the oil on the surface.

Rinse the pig's knuckles with cold water and add ice water or ice cubes to make the skin of the pig's knuckles refreshing.

Heat the oil pan, add ginger slices, add pork knuckles and stir fry for 1 minute, add cooking wine and stir fry.

Add three bowls of water, a piece of sugar, and a half bowl of vinegar. Let simmer for 20 minutes. Wait until the water is dry.
