2.
Add the egg yolk and use a manual whisk to mix evenly.
3.
Add milk.
4.
Add vanilla extract and continue to beat evenly.
5.
Sift in low-gluten flour.
6.
Use a spatula to cut and mix into a dough without dry powder.
7.
Put the dough in the refrigerator for more than one hour.
8.
Take it out and roll it out into a circle slightly larger than the pie pan.
9.
Then put it in the pie plate.
10.
Compact the sides and bottom by hand.
11.
Use toothpicks to make some small holes.
12.
Put it in the refrigerator and chill for a while, then make the filling.
13.
Creamy almond filling: butter softens.
14.
Add granulated sugar and stir well.
15.
Add the egg liquid in portions, stirring each time until it is completely absorbed.
16.
Add vanilla extract.
17.
Add Baileys liqueur and continue to beat evenly.
18.
Add almond flour, cut with a rubber spatula, and mix into a uniform cream paste.
19.
Finally add dried cranberries, cut and mix evenly.
20.
Put the filling into the piping bag.
21.
Take out the pie crust and start from the middle.
22.
Draw circles to fill the filling.
23.
Smooth it with a spatula.
24.
Preheat the oven to 180 degrees, heat up and down, put it in the middle of the oven, about 20-25 minutes, the surface will start to brown.
25.
After it cools down, apply a layer of strawberry jam (I used low-sugar strawberry jam) on the surface with a brush, and then place the washed strawberries on top one by one.
26.
Brush another layer of strawberry jam on the strawberries.
27.
Finally, sift some moisture-proof powdered sugar and you're done.
28.
Red strawberry pie.
Tips:
1. Strawberries can also be replaced with cherries, with cherries jam;
2. You can also add some dried strawberries or dried raisins to the creamy almond filling to increase the richer taste;
3. This pie crust can also be used to make various other non-melaleuca pie crusts.
