Auspicious Ruyi Bean Paste

Put the dough ingredients into the bucket of the bread machine and start the dough mixing program for 40 minutes (two 20 minutes)

Knead until the dough is fully expanded

Cover and put in a warm place to ferment to double size

Take out the exhaust and knead well, divide into eight parts, knead the garden and wake up for 5 minutes

After relaxing, roll the dough into an oval shape

After turning it over, arrange it into a rectangle again, put it in the red bean paste, and scrape it with a spatula (a thin layer is enough)

Roll up from top to bottom

Pinch the bottom edge into a cylindrical shape

Cut the dough three times, but don’t cut it completely, so that the dough becomes four.

Flip up each small circle, with the cut surface facing upwards, the two in the middle are opened, and the two sides are staggered and arranged into four petals.

Place in a baking tray, ferment twice to double the size, then brush the side and surface with egg wash, sprinkle a little black sesame seeds in the middle for garnish

Put it into a preheated 180 degree oven, middle layer, upper and lower fire, about 20 minutes
Tips:
1. The filling can be replaced with any filling you like, such as purple sweet potato, pumpkin and coconut paste.
2. The temperature and time of the oven are for reference only, and should be adjusted appropriately according to your own oven temperament.
3. The water absorption of each flour is different. Do not add up the amount of milk at once, set aside 10 grams for adjustment.
