Baked Salmon with Salted Egg Yolk

Main ingredients: salmon, salted egg yolk, ginger and shallots.

Change the salmon to a knife and cut into small cubes.
Note: The small pieces are easy to be cooked, but not externally cooked and endogenous.

Cut the green onion leaves separately, and chop the ginger.

Stir the egg yolks well.

Pour some oil in the pan, add salted egg yolks, and stir-fry the egg yolks over medium to small heat.

Put it into the cooking machine barrel and beat it into fine powder.
Note: You can also steam the egg yolks in a basket first, and then crush them, as convenient as you think.

Pour a little less oil in the pan. When it is warm, put the salmon in the pan, sprinkle some black pepper, and fry it over a medium-to-low heat (the salmon is oilier, just use a little oil).

After frying on one side, turn it over one by one, turn off the heat and set aside for later use.
Note: Don't fry it, just fry the yolk on one side. We will fry with the egg yolk later.

Fried salmon will produce a lot of oil, no need to add oil, put the crushed egg yolk in the pan, fry until the bubbles are bubbling and stir-fry evenly.

Then put the previously fried salmon in the pan.

Spray a tablespoon of rice wine, quickly stir and stir well.

Finally, put the green onion leaves in the pot, turn over a shovel, and serve.
Tips:
The salmon must not be fried, otherwise the taste will be chaotic. It can be done after frying the yellow on one side, because at the end it will be fried with the salted egg yolk, and the salmon pieces are cut very small and very easy to cook.
