Baked Sweet Potatoes in Casserole

Wash the sweet potatoes and use a kitchen paper towel to absorb the moisture.

Prepare a dry casserole and wipe it with a dry cloth or kitchen paper towel.

Put the grill in the casserole.

Spread four pieces of tin foil on the grill from different directions, and extend the tin foil to the outside of the pot in 360 degrees.

Tighten the tin foil outside the pot to wrap the pot.

Put the sweet potatoes in the casserole.

Close the casserole lid tightly.

Put it on the stove and bake on high heat for 30 minutes.

Turn it over and bake for 15 minutes.

Turn off the heat and simmer for about 15 minutes. Open the lid and easily pierce it through with chopsticks, which means it is cooked.
Tips:
1. The casserole used for roasting sweet potatoes must be resistant to dry burning, not the ordinary casserole. I use a casserole, which will not break even if it is dry or cold, so it’s no problem.
2. The sweet potatoes I use are larger, and the roasting time is relatively longer. If you want a short time, you can choose a smaller, slender sweet potato.
3. Don't worry after baking, simmer for about 15 minutes before opening the lid. I simmered it for almost 30 minutes before opening the lid, and the sweet potatoes were still warm.
4. The tin foil should be thick and large enough to cover the pan in 360 degrees to prevent the baking juice and moisture from entering the bottom of the pan and forming difficult-to-clean stains after high-temperature grilling.
