Bamboo Fungus Chicken Soup-nourishing and Health Soup in Winter

The ingredients are as shown in the picture. I used half of the chicken legs, wings and most of the chicken body. The part near the neck was too oily, so I didn’t need it. I kept the chicken fat for use;

Wash the chicken nuggets, chop them into pieces, and use tweezers to remove the small hairs;

Put water in the pot, blanch the chicken in cold water, wash and set aside;

Put the chicken in a casserole, add half a pot of water, add grass fruit and ginger, boil on high heat and turn to low heat for two hours;

During the period, cut off the fungus cap (the closed end of the root) of the bamboo fungus, soak it in cold water for 10 minutes, and change the water several times in between to wash away the impurities;

Cut the soaked bamboo fungus into 4-5 cm sections with scissors, squeeze out the water and set aside;

The chicken is simmered for 2 hours and then the bamboo fungus is added and simmered for 20 minutes;

Add goji berries, cook for two minutes, turn off the heat and simmer for ten minutes;

Just add in the right amount of salt~

Drink while it's hot, warm~
Tips:
1. It takes about 2 hours for the local chicken to be simmered for about 2 hours before it becomes soft and the chicken broth is also rich;
2. Before soaking the bamboo fungus, cut off the cap (the end with the root closed), otherwise it will have a strange smell. Do not soak the bamboo fungus for too long, just 10 minutes, it will affect the taste for a long time;
3. Bamboo fungus is cool in nature, people with spleen and stomach deficiency and diarrhea should not eat more~
4. Add a little salt to the chicken broth to taste, the original soup is the best.
