Today this soft biscuit is added with boiled banana sauce to control the moisture content of the biscuit dough to an appropriate level. Because of the natural softness of banana pulp, the taste of biscuits is also very smooth and delicious. It feels different from the previous two soft cookies~

Ingredients

Banana Soft Biscuits

1. Handle the bananas first. Peel the bananas and put them in a small pot. Use one end of a rolling pin (or other tools) to mash the bananas. Heat the mashed bananas over medium heat until it boils. Stir constantly during heating. After boiling, turn to low heat, continue to stir and simmer for a while, so that the mashed banana is concentrated into a sauce, and the banana sauce is simmered as shown in the picture. The boiled banana sauce is cooled for later use. After the butter is cut into small pieces to soften, add the fine sugar and beat with a whisk for 1 minute

3. Pour in the rum (or brandy) without stirring at this time. Mix the flour and baking soda and sift into the butter. Use a rubber spatula to stir evenly, so that the flour, rum and butter are fully mixed to form a biscuit dough. At this time, the dough may be very sticky. Put the dough in the refrigerator for a while until it becomes hard and not sticky. Take out the refrigerated dough and shape it into a column as shown in the figure. Put it in the freezer of the refrigerator and freeze it until it is hard. After taking out the frozen dough, use a knife to cut into 0.5cm thick slices. Place the cut biscuits on the baking tray (the biscuits will expand when they are baked, and each biscuit Please leave enough space in between). Put it in a preheated oven at 190℃, bake for about 10 minutes, until the surface of the biscuit is golden brown and ready to go out of the oven

Tips:

1. When simmering the banana sauce, boil it over a low fire and stir constantly to prevent the bottom from getting stuck. Banana sauce should not be too thin, otherwise it cannot be blended with butter, and the mixed dough will be too wet and soft;
2. This is a soft biscuit, the taste is softer than ordinary biscuit, between biscuit and cake. After the biscuits are cooled, they can be eaten. If you put the biscuits in the microwave for more than ten seconds before eating, warm the biscuits, you can get a softer taste;
3. Try to choose ripe bananas (bananas with dark spots on the skin) to make this biscuit, the aroma of bananas will be strong. If the banana is not too ripe, the effect will not be good enough;
4. The taste of soft biscuits needs to strictly control the water content of biscuits, so its baking time and temperature requirements are higher than ordinary biscuits. The best baking time for this biscuit is 10-12 minutes. If the baking time is too long, too much moisture will evaporate, which will affect the soft taste. If the biscuits are not colored to the right level after baking for 12 minutes, the baking temperature is too low. Please increase the oven temperature appropriately and try again.
