The fresh saury is delivered straight out of the box and smells umami. If you want to eat it as soon as it is fresh, let’s start cooking immediately.

Rinse the saury with clean water, and then use kitchen paper to absorb the moisture on the surface. Don't open the mouth to remove the internal organs, and don't use a knife, just cook it whole.

Tips:
1. The saury that has been coated with white vinegar will be more crispy when it is grilled.
2. The salted saury should not be marinated for more than 1 hour. The meat will be older if it takes too long.
3. Bake in the oven at 230 degrees for 15 minutes and you can eat it. If the baking time is too long, the fish will become old.
4. The authentic Japanese-style grilled saury is not gutted, but eaten with the giblets, especially the bitter gall parts, which is the original flavor.
