Reference age: I posted this recipe some time ago in my circle of friends over 12 months. Everyone liked it very much. I sent the recipe to some sisters in private and received a lot of homework.
Recently everyone asked me about this recipe again, so I sorted it out and sent it again~
Caterpillar bread is definitely the star of bread, the classic of the classics! I can only say that it is too delicious. The elderly at home who don't like bread usually don't really like bread.
The food I made at home can be so delicious, and the supermarkets sell it so weakly! The taste is not as fragrant as the one made by myself. I bite it down. The red bean paste is full of flavor, sweet and delicious.

Accessories: 200 grams of red bean paste, 5 grams of cooked white sesame seeds, and 10 grams of egg liquid. Difficulty analysis: Intermediate

3. Continue to add fine sugar and salt, then pour in low-gluten flour, high-gluten flour, and finally dig a small hole to put in the yeast.

According to the order of liquid first, powder type, 1. Egg liquid-2. Clear water-3. Fine sugar-4. Salt-5. Flour-6. Yeast, pour into the bread bucket one by one.
Try to avoid contact between sugar and yeast, otherwise it will affect the quality of fermentation.

4. Put the bread bucket into the bread machine.

5. Start 18 custom kneading program, time 20 minutes.

6. After kneading the dough, select 20 fermentation mode for basic fermentation for 1 hour, and start the bread machine.

7. Ferment to double the size.

8. Then divide into 6 rounds and let stand for 10 minutes. When standing, cover with a layer of plastic wrap to prevent the surface of the dough from cracking. Be sure to stand still, this is to prevent the dough from shrinking, don’t omit it~

9. Take a dough and roll it into a nearly square pancake. If it is sticky, you can sprinkle some dry flour on the chopping board.

10. Take a small amount of red bean paste filling and spread 2/3 of the dough.

11. Cut the remaining dough into strips about 1cm wide, and the length is about 1/2 of the dough.

12. Roll it up from top to bottom, be sure to roll it tightly.

13. When the mouth is down, it becomes a caterpillar. Roll the other rolls in the same way.

14. Put it in the oven for the second fermentation for 30 minutes until the "caterpillar" is 1.5-2 times larger.

15. The surface of the fermented dough is brushed with a layer of whole egg liquid, and then sprinkled with some white sesame seeds for decoration.

16. Preheat the oven to 180 degrees, and bake the middle layer up and down for 15 minutes. When baking to 8 minutes, you can cover the bread with a piece of tin foil to insulate it to prevent the egg liquid from baking too long and turning yellow, so that the color of the bread will be better.

The baking time can be adjusted flexibly. The firepower of the oven and the size of the bread dough will affect the baking time of the bread, pay attention to observation.

When the surface of the bread starts to turn yellow and color, it can be judged that the bread is basically ready to be baked.

17. Take it out immediately after it's baked, and you can take it to your baby after it cools~ Tear one while it's hot and eat it, wow, it's delicious!
