Bean Paste Filled Candied Haws

For white granulated sugar, the coarser granule is better;

Choose fresh and plump hawthorn, wash and cool to remove moisture, cut the hawthorn across the waist, dig out the core with a knife, and fill in the red bean paste (I made the red bean paste by myself, and the supermarket also has it). Gently press a sauteed pine nut;

Wash the bamboo skewers with clean water and then boil them in boiling water. String the stuffed hawthorn from small to large, and string a few randomly. If there are children at home, it is best to cut off the tips of the bamboo skewers for safety;

The ratio of white sugar to water is 2:1. Put it in the pot at the same time, be sure to use a stainless steel pot or an enamel pot;

Boil the sugar and boil the gas stove on high heat for 5 minutes. When big bubbles begin to appear, turn to medium heat and continue for 5 minutes until there are no big bubbles in the pot, only small bubbles, and the color is shiny, change to low fire , Otherwise the sugar will be boiled over the fire because the water evaporates too fast. The boiled syrup must be removed from the fire immediately. Do not stir when boiling, shake the bottom of the pot with your hands while boiling, so as to avoid uneven heating or sticking to the pot.

Dip in sugar, prepare a clean cutting board, and smear it with a thin layer of water by hand. Gently turn the skewered hawthorn against the foam on the boiled hot sugar, wrap it in a thin layer, and quickly put it on a water plate to cool for two to three minutes before enjoying. (The action must be fast when dipping sugar. If it is slow, the sugar will cool and solidify. Dipping sugar requires skill. If the sugar is too thick, it will affect the taste. The sugar should be dipped in a thin and even layer to taste delicious).
