Continue to knead the dough until it becomes a film, take a small piece of dough and slowly stretch it out with your fingers, you can pull out a thin layer of film;

Then put it in a warm place, cover it with plastic wrap, and ferment it to 2.5 times the size of the dough. Take it out and place it on the chopping board and flatten it to exhaust;

Divide into six small balls and round;

Cover with plastic wrap and put it on the chopping board for 15 minutes;

Divide the red bean paste into 25g balls;

Take a dough, flatten it, roll it out on the chopping board, and wrap it in a bean paste ball;

Put it on the chopping board when rounded and closed;

Roll it into a beef tongue shape;

Use a sharp knife to cut a few rounds on the surface;

Roll up from bottom to top;

Bend the rolled dough into a round shape and press tightly at the two ends to prevent it from spreading during the second fermentation;

Put it on the baking tray, and then put it in a warm and humid place for secondary fermentation;

Until fermented to twice the size;

Brush the surface with a layer of egg liquid, send it to the middle layer of the preheated 180 degree oven, bake for about 13-15 minutes, and the surface will be golden.

Tips:
1. If there is a fermentation tank, it is best. You can directly set the temperature to 38 degrees and the humidity to 85%. It does not matter if there is no fermentation tank. It can be placed in a closed space, such as an oven and microwave, and then inside Put a pot of hot water to ferment;
2. Nowadays, many ovens have low-temperature fermentation function, but when in use, a pot of hot water must be placed in the oven to increase its humidity.
