Bean Paste Sandwich Biscuit

Cut the butter into small pieces and soften at room temperature.

Use chopsticks to beat the butter lightly. (This step is very tiring. If you have an electric whisk, you can use it. It will be fluffy and feather-like. I really don’t have a whisk. I just rely on my strength, and the whisk is not very strong.)

Pour the egg liquid into the butter three times and continue to beat.

Sift in low-gluten flour and powdered sugar.

Just mix the dough to a state without dry powder, no need to knead the dough excessively. Refrigerate the kneaded dough for 30 minutes.

Take out the refrigerated dough and roll it into a 0.3cm dough sheet.

Carve out the shape with a mold. It can be cut into chunks without cutting the shape.

Carve all the cookies.

Fork some small eyes. Feel free to fork, and my inner appearance association is dispatched again.

Preheat the oven, place the baking tray on the middle level, and heat up and down, 160 degrees high and 150 degrees low, for about 15 minutes.

The baked biscuits are slightly braised in the oven before taking them out. As you can see, the color of my biscuits is not heavy at this temperature.

Squeeze into the bean paste. Do not squeeze the edges of the cookies.

Cover with another cookie.

Tips:
1. If you have an electric whisk, beat the butter to a fluffy feather shape, and continue to beat it after pouring the egg liquid.
2. Simmer the baked biscuits in the oven for a while, do not take them out immediately.
3. The temperature of the oven must be adjusted according to your own situation.
