1.
Shave the pork skin with a knife (if you feel it is not clean, you can burn it on the fire), wash it, put it in a pot of boiling water, add a little cooking wine, and simmer for 10 minutes.
2.
After removing the skin, use warm water to rinse off the foam and then use a knife to scrape off the white oil in the skin (two more times are best)
3.
For comparison, this is the skin of the meat before the grease is scraped.
4.
This is the skin after scraping the grease once. I scraped it twice.
5.
Cut the fat-scraped skin into strips.
6.
Scald the cut meat strips twice with hot water to remove excess oil.
7.
Prepare ginger slices, white onion segments, 2 bay leaves, 2 small segments of cinnamon, and two star anises.
8.
Wrap the above materials with clean gauze to make a seasoning bag.
9.
Boil a pot of water (approximately twice the amount of the skin), and let the water open into the cut skin.
10.
Put it in the seasoning packet.
11.
Add salt, sugar soy sauce and dark soy sauce.
12.
After the high heat is boiled, turn to low heat and cook until the skin becomes soft. Remove the seasoning after about an hour.
13.
Pour the cooked meat skin into a heat-resistant storage box, wait for the soup to cool, and put it in the refrigerator until it has solidified and formed.
14.
When eating, mix with ground coriander, vinegar, sugar, salt, and light soy sauce to make a juice.
Tips:
1. When scraping the fat of the skin, you can scrape once and rinse with hot water. Then repeat this process twice.
2. The amount of water used to stew pigskin should not be too much, it should be twice the amount of pigskin, otherwise too much water will not solidify.
3. When cutting pigskin for freezing, dip both sides of the knife with clean water, and the cut pieces are more complete and beautiful.
4. Meat jelly can provide a lot of collagen, which is very good for the skin, and girls can eat some appropriately.
