Beef Noodles in Clear Soup

First, make a pot of beef soup; please see my recipe [Cold Water Beef] for details, I won’t repeat it here; you can prepare 267g flour, 1g salt, and 1g baking soda when making the soup;

Mix flour, salt and baking soda evenly;

Prepare 89g water;
4.
After the noodle machine is installed according to the instructions, pour flour, salt and baking soda;

Turn on the power and select the "automatic" function;
6.
Slowly pour 89g of water into the water injection port;

After the noodles come out of the noodle outlet, sprinkle some dry flour to prevent sticking; when the noodles are of a certain length, cut them short with kitchen scissors; if the noodles are not used immediately, they can be hung in a cool place to dry, or they can be stored in food. In the box, frozen and preserved;

Pour an appropriate amount of water into the boiling pot to boil, put the noodles in the pot and cook;

While cooking the noodles, prepare the homemade noodle sauce;
10.
Pour beef broth in the noodle bowl, sprinkle some pepper, and some chives (I ran out of chives, so I didn't put them);
11.
Remove the cooked noodles, put them in a bowl, and put beef on them;
12.
Just pour on the noodle sauce.
Tips:
1. Before boiling the beef soup, blanch it so that the soup is brighter and has no peculiar smell;
2. Salt until the beef is simmered and softened, and the soup can be put in when the color is clear;
3. If the prepared noodles are not used immediately, they can be hung in a cool place to dry, or they can be placed in a food storage box and kept frozen;
4. The noodle sauce can be self-made or bought at the supermarket;
5. All-purpose flour is good for making noodles. The shelf life of my high-gluten flour is almost past, so I use high-gluten flour;
