Beef with Pickled Pepper and Sour Soup

Prepare the ingredients and cut the pickled peppers with scissors in advance, which is more convenient to taste.

Prepare some ingredients as shown in the picture. I bought my bell peppers fresh and salted them with garlic. Bell peppers are very spicy, so the spiciness can be increased according to personal taste.

Put the bottom oil in the pot first, stir-fry a little pickled pepper and bean sprouts, add half a teaspoon of salt, for a little bit of bottom flavor.

Stir-fry for a few times and add some pickled pepper water. It's about 80 years old and ready for use.

Add additional oil to the pot, stir-fry the green onion, ginger, and garlic in the pot, then add bell pepper and pickled peppers and stir-fry together. When the aroma is released, add appropriate amount of water, salt chicken essence, white sugar and white pepper to boil.

Add the udon noodles after boiling. Use chopsticks to gently scatter the udon noodles while boiling. After dispersing, cook for one minute to add the enoki mushrooms, and then add some white vinegar to taste.

Place the freshly prepared bean sprouts on the bottom of the bowl that holds the beef with sour soup, and then wait for the enoki mushrooms and udon noodles to ripen and spread them evenly.

Keep the water in the pot, boil and add the beef rolls.

Since the beef rolls I bought abroad have a lot of blood, so after the pot is boiled, use a spoon to remove the blood as much as possible, and then remove the meat rolls and place them on top of enoki mushrooms. You can taste the remaining soup to see if Enough flavor, not strong enough, can be seasoned appropriately. Finally, filter it with a strainer, and pour the soup in the pot on top of the fat cow.

Finally, you can prepare some pickled peppers, chopped green onions, and some green and red peppers or rattan peppers on the surface for decoration. I didn’t have any red peppers, so I had to sprinkle some goji berries to add color~~
Tips:
Pickled peppers, bell peppers, and white vinegar are indispensable ingredients in this dish. Other side dishes can be added according to personal washing.
It is recommended to filter the soup with a strainer at the end, so that this dish will look better. If you like, you can add a thick soup treasure by the way when you add water, and it will be more flavorful.
