Ai Wo Wo is a halal snack made from glutinous rice in Beijing. It is characterized by snow white color, spherical shape, sticky texture, and sweet taste. Not only Beijingers like this snack, but also foreigners who come to Beijing often want to taste this nationally famous halal snack. Every year around the Spring Festival of the lunar calendar, snack bars in Beijing will sell this variety until the end of summer and early autumn. Therefore, Aiwowo is also a spring and autumn variety, and it is now available all year round.
There are two theories about the origin of Aiwowo. One is that it has existed in ancient times and originated in Beijing; the other is that it was brought into the Qing Palace by Uyghur Muslims and then spread to the people of Beijing. In fact, whatever you say, what you like to eat is good.

Beijing Aiwowo

1. Soak the rice overnight

3. After 15 minutes, take out the glutinous rice, pour in boiling water, and stir while pouring the boiling water to make the glutinous rice fully absorb the water. About a small bowl

4. Then put it in the steamer and steam for 15 minutes

6. Steam the flour in a steamer for 15 minutes. The steamed flour will become dry and hard, so after the noodles are allowed to cool, use a rolling pin to break the noodles into small pieces.

Tips:

The ratio of the ingredients in the filling can be changed by yourself. The honey I use can be replaced with sweet-scented osmanthus, etc. Don't put too much, put a little bit, it is enough to stick the materials together, and the sweetness is controlled by yourself.
