Beijing Traditional Halal Snacks——ai Wo Wo
1.
Ingredients: rice, flour, preserved fruits (apple, pear, raisin), cooked sesame, sweet-scented osmanthus, rose, cooked peanut.
2.
The rice is steamed in a pot (first steam for 40 minutes, add some boiling water and stir, then steam for 20 minutes, a total of one hour), and steam the flour for one hour. (I forgot to take photos in this session).
When steaming the rice, prepare the filling, cut the preserved fruit into small cubes, about the same size as the raisins, remove the stems and hearts of the rose, and chop the peanuts as long as the petals.
3.
After the flour is steamed, it is a little lumpy. Roll it into a powder with a rolling pin.
4.
Put the chopped preserved fruit, raisins, chopped peanuts, cooked sesame seeds, and sweet-scented osmanthus together and mix well.
5.
Mix well.
6.
Sprinkle some cooked noodles on the panel, put the steamed rice and knead a few times, knead the long strips, and cut them into an agent larger than a table tennis ball.
7.
Press the agent into a bowl shape by hand, put the fillings in, slowly kneading, dusting some cooked noodles, and gently rounding.
8.
Serve, complete.
