Bird's Nest with Rock Sugar

Two bird's nests.

Soak the bird's nest: soak the bird's nest in clean water for 3 hours.

Use tweezers to remove impurities.

Add bottled water to the bird's nest bowl.

Put water and steaming rack into the steamer.

Put the bird's nest in.

Add a lid larger than the bowl.

Cover the pot and turn on the fire. After simmering for 1 hour, open the lid, add rock sugar, and simmer for another half an hour.

Open the lid and the bird's nest with rock sugar is simmered.

Out of the pan.
Tips:
1. The time for soaking bird's nest varies according to the temperature. It takes 4-5 hours in winter and 2 hours in summer. If it is processed clean bird's nest, the soaking time should be shorter, as long as half the time is enough.
2. After simmering for 1 hour, the bird's nest will rise very well and there is no water in the bowl when the rock sugar has not been added. After adding the rock sugar, the water separated out again, and the bird's nest seemed to shrink a little. Next time I will stew the bird's nest again, I will not add rock sugar when I eat it.
