Birthday Cake

This time I made a 6-inch cake, so first prepare a 6-inch chiffon cake and cut it into 3 slices of uniform thickness. (The method of 6-inch Chiffon has been introduced in my recipe, friends who need specific methods can check it out)

Add whipped cream to fine sugar and whip at high speed. After the lines appear, you must observe for yourself not to overspread. Put the whipped cream in the refrigerator for later use

Cut the mango vertically from the middle (do not cut to the mango core), and then use a knife to make a vertical strip on the mango slice, just as deep as the mango skin.

Then use your fingers to hold the mango skin underneath, move your fingers up and turn your palms down, push the mango flesh up and use a knife against the mango skin to cut it off.

Put a slice of the cut cake base on the cake tray and pour some cream on top

Smooth all around with a spatula

Put the sliced mango cubes on top and flatten, add a spoonful of cream to flatten

Cover a layer of cake base, then use the same method as above to smoothen the cream and add fruit, and then smoothen the cream

Finally, just cover a piece of cake base with a cream seal, and add cream to smooth the surrounding area.

Take a large piece of dark chocolate and use an iron spoon to scrape down the side of the chocolate chips vertically, and sprinkle enough chocolate chips on the surface of the cake

Put the piping mouth in the piping bag first, and then add the whipped cream

Squeeze the cream florets down the top layer along the edge of the cake in a circle

This is a complete cake with all the cream squeezed around it. You can put a pattern on the chocolate chips, or you can insert a birthday card to give it away.

Dark chocolate shavings with red fruits are the most beautiful, but cherries and strawberries are not found this season. I used mango cubes to put a flower on it, put it in a 6-inch cake box, and then I can carry it as a gift.
Tips:
1. The cake base can be 2 or 3 layers, according to personal preference.
2. The fruits inside can also be replaced with fruits of your own preference. It is recommended not to use fruits that oxidize fast.
3. When the cream seal layer is smooth, the requirement here is not high, because the chocolate chips must be added on the top and the cream florets around.
4. If the finished cake is not delivered in time, put it in the cake box and put it in the refrigerator.
