Strawberry Mousse Cake

Cut 2 slices of chiffon cake and cut one slice into a small circle

Prepare mousse ingredients

Add 8 grams of isinglass powder to 35 grams of water, stir and soak for 10 minutes

Insulate the water until it melts and let cool

Add 10 grams of sugar to the whipped cream until it has obvious lines but it can still flow

Pour yogurt and 30 grams of sugar into the strawberry jam and stir well

Pour the cooled isinglass powder and stir evenly

Pour in the whipped cream and mix evenly into a mousse

Add a large cake slice to the bottom of the mold, then pour half of the mousse

Then add a small circle of cake slices

Then pour in the remaining mousse, which is almost 80% full, leaving a little space for the mirror surface. Keep in the refrigerator for 4 hours

Add QQ candy to water and melt it in water, I put it directly into the microwave oven for 30 seconds and wait for the time to come

Take it out of the refrigerator, pour the sugar solution onto the surface of the cake and put it in the refrigerator for 2 hours.

When unmolding, you can use a hair dryer or under a hot towel. The decoration is according to my own preference. I use sugar beads to decorate.
Tips:
1. The added yogurt should be thick and thick.
2. The amount in the picture is the amount of 2 mousses, I have separated these.
