Bitter Gourd Omelette

Prepare the materials; (Go to both ends of the bitter gourd and clean it).

Cut bitter gourd into small pieces, marinate in brine for 30 minutes, and squeeze out the water.

Blanch the bitter gourd grains in boiling water for 1 second, remove them and place them in a basin of cold water to cool them down.

Put bitter gourd diced in a bowl, beat in 2 eggs, salt and white pepper.

Add water and starch to break up.

Pour the oil in the pan to heat up, pour the egg mixture and fry on low heat.

Because the egg jelly is thicker, cover the pot and fry on low heat to make it easier to cook.

Fry on one side, add some cooking oil, turn it over, and fry until golden on both sides.
Tips:
1. Put more oil in the omelette, because eggs eat more oil, and if there is too little oil, the omelette is not easy to fluffy.
2. After salting and blanching, bitter gourd has basically no bitter taste.
