Bitter Gourd Scrambled Eggs

Beat eggs, add 1/4 teaspoon salt, 1/4 teaspoon pepper, 1 tablespoon vegetable oil, beat well;

Change the bitter gourd into thin slices, stir-fry in a pot, add 1/4 teaspoon of refined salt, fry until half-cooked, set aside;

Put the pot on the stove again, raise the high heat, let the pot heat up and release the oil, pour the egg liquid;

Pour melon slices and stir fry quickly;
5.
Stir-fry for a while and the egg mixture is basically solidified before being out of the pan, don't fry too old.
Tips:
1. Add proper amount of oil or water to the egg liquid to make the egg slippery when fried;
2. In order to prevent the eggs and melons from being cooked asynchronously, sauté the bitter gourd until half-cooked.
