Bitter Gourd Scrambled Eggs

Soak the bitter gourd in water for 10 minutes, wash and set aside.

Beat 4 eggs into a small pot and set aside.

Bitter gourd digs out the seeds.

Cut into thin slices, add 1 tablespoon of salt and stir well.
5.
Heat oil in a pan, add bitter gourd and stir fry until the color changes.
6.
Pour in a little oil, pour in 4 eggs, and turn the eggs in the pan around the side of the pan.
7.
Scatter the egg yolks and fry them until golden on both sides.
