Bitter Gourd Thick Egg Braised

Cut the bitter gourd into thin slices.

Chop again.

Beat the eggs, add the chopped bitter gourd, and stir well with salt.

Non-stick pan brush with thin oil to heat up.

Pour one-third of the egg mixture and turn the pot to make the egg mixture evenly cover the bottom of the pot.

Use a spatula to help roll up the omelette when the egg mixture is about to solidify.

Push the egg roll to the side of the pan after it is rolled.

Pour the egg liquid for the second time, and turn the pot likewise to spread it into egg skins. The egg skins and omelets stick together.
9.
Rolled up for the second time.
10.
Same as above, pour the remaining egg liquid again and spread it into egg skins.
11.
After the final roll, continue heating for 1 minute to make the inside of the egg roll fully mature.
12.
Just cut the egg rolls out of the pan.
