Bitter Melon Eggs that are Not Bitter

Wash the bitter gourd, remove both ends, empty out the flesh with a small spoon, and cut into thin slices.

Soak the bitter gourd slices in salt water (1 bowl of clean water➕ 1/2 spoon of salt) for about 20 minutes.

Beat the eggs into egg mixture and add 1 spoon of salt.

Drain the bitter gourd slices and mix them with the egg mixture.
5.
After the nonstick pan is heated, pour in the salad oil.

After the oil temperature rises, add bitter gourd eggs and stir fry.
7.
After the bitter gourd changes color, add 1/2 spoon of salt to taste; it can be out of the pot after it is cooked to taste.

Finished product.
