We take out the fermented dough and knead it evenly, then cover it with plastic wrap and let it stand for 15 minutes, then cut the two pieces of dough into irregular pieces randomly and place them in a toast box, and send them to the oven for the second fermentation.

Ferment to 80% full (the oven is preheated at 180 degrees at this time). After preheating the oven, put the toast box into the lower level of the oven, and bake at 175 degrees for 40 minutes (temperature is for reference only)
