Black Fish Soup

After killing the black fish, wash and cut into thick pieces

Prepare seasonings (yellow wine, salt, white wine, ginger, shallots)

First use 3 grams of salt and 1 tablespoon of white wine, add half of the ginger slices, mix well and marinate for 2 hours, then rinse with water and drain the water.

Pour oil in the pot

Warm oil fish skin side down

Fry until slightly yellow on both sides

Cooking rice wine

Add water and put it in a soup pot, add ginger and shallots

Cover with a big fire

Bring to a boil and remove the foam, then cover, turn to low heat and simmer for 40 minutes

Turn on and add salt to taste and turn off the heat

Sprinkle with chopped green onion and serve
