Black Sesame Biscuits

150 grams of fermented rice.

Add fermented distilled spirits to the flour, knead with a suitable amount of warm water until the dough is smooth and ferment in a warm place. (I used it for about 6 hours)

Ferment to double the size. After exhausting, rub into long strips and divide into 8 equal portions.

Take one of them, roll it into a round cake, and wrap it with black sesame filling.

Wrap round and press into small round cakes. Cover with plastic wrap and let it sit for about 30 minutes.

Brush the pan with a thin layer of oil, put in the cake dough, cover and fry on a low fire.

Fry until one side is slightly yellow, then turn it over and fry until the other side is also slightly yellow. Add half a bowl of water to 1/3 of the cake, cover and turn to medium heat. When the water is dry, open the lid and fry until golden on both sides.

Tips:
This cake is completely fermented by wine, so the fermentation time is longer. It must be placed in a warmer place to help ferment. The dough needs to be fermented into a honeycomb shape. It is also good to pack red bean paste into the filling according to your preference. The fillings can also be omitted.
