Blueberry Yam Puree with Orange Sauce
1.
Wash the yam
2.
Peel off the skin, be careful not to touch the skin of the yam when peeling, or it itch and cry for you!! ! It’s best to wear disposable gloves when shaving. If your hands are really itchy, let me tell you a practical and useful method (you can check it out on Baidu, none of them work), first spray anti-itching toilet water, some Card, and blow the hot air from the exhaust fan for about a minute.
3.
Cut into small pieces for easier steaming
4.
Put it in a steamer and steam for half an hour. You can press it in a pressure cooker until it is steamed until the yam is soft and becomes puree.
5.
Add white sugar and milk to make a puree. Add the milk little by little. The final yam puree should not be too thin.
6.
Add blueberry fruit powder to adjust the color. Although it is extracted from fruit, it is better to eat less pigment. I only put a small spoonful, which is slightly blue.
7.
Put it into a piping bag to squeeze out your favorite shape
8.
Add a little cold boiled water to the orange sauce to dilute, and then gently pour it into the plate along the sides.
Tips:
There are two types of yam, one with thick wrists and smooth surface, and the other with fine hairs. To make yam mud, choose the latter, the former is suitable for frying.
