Boiled Potatoes with Minced Meat

Mince pork and set aside. It does not need to be minced, but meat slices are used.

Cut the green onions, separate the white part from the green, and put the white and ginger together.

Peel the big potatoes and cut them well. Slice and dice as you like.

Heat oil in a pan, add ginger and shallots, and stir fragrant.

Turn off the heat, add the minced meat, and quickly disperse it. If you turn off the fire, use the residual heat of the pot to break up the meat. If you don’t turn off the fire, the minced meat will tend to form a ball, which is not easy to fry. When it is scattered, it is initially formed, then turn on a small fire and sauté.

Add a little sugar and soy sauce and stir well.

Add water, add big potatoes, add salt, stir well, bring to a boil on high heat, then change to low heat.

Cook until the potatoes are cooked, and when they are rotten to your liking, add green onions.

Turn off the heat and cook.
Tips:
1. The sign of a big potato is that it can be lightly inserted through the chopsticks, or it will break easily when pressed with a shovel. I like to cook it until the corners are a bit rotten.
2. Add salt to the big potatoes when they are in the pot, because you can turn them at will at this time, and they will break when they are cooked.
