Boiled Yellow Croaker

Clean the yellow French fish, make a cross cut under the gills, and then a cross cut at the tail, opening the belly of the fish to a prone position.

The dried shrimp should be soaked in the prawn beard and the hard shell of the head slightly, then the ginger and green onion shall be reserved.

Put an appropriate amount of water in a pot, add the dried shrimp, boil the cooking wine, ginger and green onions, then reduce the heat to a low heat to slowly simmer the flavor of the shrimp.

When the soup is thick, add half a tablespoon of chicken juice.

Put the yellow croaker with a lid and bring to a boil on high heat.

Reduce the heat and simmer for 8 minutes. When the sauce is thick, add the ginger and green onions. Turn off the heat and serve.
