Braised African Crucian Carp

African crucian carp is washed clean and salted for preparation.
Slice garlic.
Sliced ginger.
Break the dry chilies.
Cut green onions into sections.

Put the oil in the pan to heat up, put the African crucian carp in it and fry it on one side. When turning it over and fry, put the garlic slices, ginger slices and dried chilies into it.

Put another spoonful of bean paste in it, do not put the fish on it, put it on the oil on the side of the pot, so that the bean paste will be fragrant, and then pour some cooking wine in from the edge of the pot.

When the other side is fried, pour the boiling water in. The water is almost level with the fish. Cover the lid and bring it to medium heat.

If the soup is less thick, put the scallions in, add a little soy sauce and chicken essence, and cook until the soup is thick.
