Braised Beef Flavor Noodles

2. Spread the fried pepper and salt evenly on the beef shank, wrap the beef in plastic wrap and marinate overnight

3. After the beef is marinated, prepare the side dishes. Diced dried fragrant and shiitake mushrooms, minced green and red pepper

4. After washing the marinated beef with pepper and salt, add cold water to the pot, add green onion and ginger cooking wine to boil

5. After the fire is boiled, skim the foam and pour the ingredients in the lo-mei bag. The ingredients here include star anise, grass fruit, bay leaf, cinnamon, cardamom, angelica, licorice, tangerine peel, clove, cumin, pepper, etc.

6. After boiling, add soy sauce, light soy sauce, dark soy sauce, yellow rock sugar, and brine juice in turn

7. Bring to a boil, add dark soy sauce and salt according to the color and taste. Then simmer on low heat for 1 hour. During this time, use chopsticks to easily pierce it through. Turn off the heat and simmer for 1 hour, then boil again on low heat and simmer for 1 hour. Turn off the heat and leave it for more than two hours.

8. Let the marinated beef cool for later

9. Cut the marinated beef into small grains about 8 mm in diameter

10. Put the oil in the pan and heat up the beef cubes and fry them slightly

11. Then add the chopped shiitake mushrooms and dried fragrant

12. After adding two tablespoons of braised soup, add some dark soy sauce and soybean paste and stir well

13. Add water to a boil over high heat, simmer for about 20 minutes on low heat to make a thick

14. Finally add the green and red pepper

15. After boiling for about 5 minutes, thicken it

16. Just mix the prepared sauce into the cooked noodles

Tips:

1. Choose veal tendon for beef, because the texture of beef and tendon are staggered, and the taste is the best.
2. The process of marinating is to make the meat firm, and it is not easy to boil in the process of marinating. But the marinating time should not be too long to prevent over saltiness.
3. If you like the sweet taste, you can also add some sweet noodle sauce.
