Braised Black Eggplant

Wash the eggplant and cut into large pieces, add an appropriate amount of salt, stir well and marinate for ten minutes.

Take a bowl and add: 2 tablespoons of minced garlic, 1 tablespoon of light soy sauce, 1 tablespoon of oyster sauce, 0.5 tablespoons of aged vinegar, 0.5 tablespoons of white sugar, 3 tablespoons of water and mix well

Add two tablespoons of starch to the eggplant and mix well.

Heat oil in a pan, pour the eggplant chunks and stir fry.

Stir fry until the eggplant is slightly soft.

Pour the previously prepared sauce into the pot and stir fry evenly.

Cover and simmer for five minutes.

Add a little chopped green onion and stir evenly
Tips:
It feels that the eggplant is not peeled, and it is more nutritious to eat. If you don't like to eat the peel, you can remove the peel. Just add a little salt to the eggplant at first, don't need to add too much salt, adding too much will make it salty.
