Tips:
1. Chicken blanching or not blanching depends on the quality of the chicken you buy. The chicken I used today is chai chicken, and the fishy smell is very small, so there is no blanching;
2. The rice wine I use is made by myself, also called glutinous rice grains, which are sold in supermarkets;
3. Squeeze out the water when adding shiitake mushrooms to fry, so that the shiitake mushrooms are delicious, then pour the water for soaking shiitake mushrooms and cook together, so that it tastes delicious and the water for soaking shiitake mushrooms is also very nutritious;
4. If you find it troublesome to use several pots, you can also use a wok to slowly simmer the juice.
