Shiitake mushrooms, fire-roasted fish, and soybeans are all fresh, but the way they are fresh is different, and they become integrated after they are fused with each other. Hunan people like to eat chili, but if you put dried chili in this kind of cooking for a long time, it is recommended to stir fragrant at the end, otherwise the dried chili will become soft and rotten after being stir-fried and then boiled, and it will be spicy and not fragrant.

Braised Fire-roasted Fish with Mushrooms and Soy Beans

1. Soak the soybeans the night before, and soak the fire-roasted fish in warm water until soft

2. Wash the shiitake mushrooms and cut into thin slices, cut the ginger and minced ginger, smash the garlic, peel and mince, wash the green onion and cut the green onion

3. Put the oil in the pot until 70% hot, add the fire-roasted fish to medium-low heat and stir fry until it is crispy

4. Grill the fish to one side, add minced garlic and ginger until fragrant

5. Add the soaked soybeans and fry for about 4 minutes, add water and simmer for 5 minutes until the soybeans are soft and tender. Then add the shiitake mushrooms and fry for 1 minute
