Braised Five Spice Fish

One fish is descaled, gutted, fins and tails removed. Any fish will do, I chose "Three Scales" today.

Clean the black abdomen in the belly of the fish and the serum at the spine of the fish.

Scratch both near the head and tail of the fish.

Pull out the fishing line from the fish body. Usually, the fish cooked by these steps will have no fishy smell. Some fish do not have a fishing line, so this step can be omitted. When drawing the fishing line, use the other hand to pat the body of the fish while drawing the fishing line. The fishing line can be easily drawn out.

Make a few strokes diagonally on each side of the fish. Spread the body and belly of the fish with cooking wine and marinate for ten minutes.

Fill a bowl with a spoonful of ginger powder, a spoonful of five-spice powder and a spoonful of salt

Mix the three seasonings and apply them evenly on the opening of the fish body and inside the fish belly. Marinate for another ten minutes.

Mince the ginger, garlic and green onion, then chop some chopped green onion and coriander.

Put the ginger, garlic and green onion in a bowl, pour more vinegar (about 5 spoons), 2 spoons of cooking wine, 1 spoon of dark soy sauce, 1 spoon of light soy sauce, 2 spoons of oyster sauce, 1 spoon of sugar and 1 spoon of five-spice powder into the bowl and mix thoroughly .

Put an appropriate amount of oil in the pan, and fry the fish in the pan over medium heat when the oil is at the sixth level. Don't turn over, shake the pot to let the oil soak into all parts of the fish. At the same time, use a spoon to pour hot oil on the fish.

Pour the adjusted bowl of juice, add appropriate amount of water, cover the pot and simmer over medium heat for ten to fifteen minutes.
