Braised Flat Fish

One flat fish, clean it up.

Cut out the knife flower for later use. (It's so easy to taste)

Sprinkle onion, ginger, garlic, salt, cooking wine and marinate for 10 minutes.

Prepare a proper amount of oil at the bottom of the pot. To avoid sticking to the pot, the amount can be larger.

Put the marinated fish in a pan and fry on both sides until golden, add a small amount of vinegar to remove fishy, cook a spoonful of cooking wine, add sugar, soy sauce, pepper, aniseed, dried chili, cumin and salt to taste.

Add water to the body of the fish. Bring to a boil. Turn to low heat and simmer for about 15 minutes. Collect the juice.

Put it into the plate, sprinkle a little shredded green onion and coriander to garnish.
