Braised Golden Fish

Remove the internal organs of the Jinchang fish, clean it up, and marinate it with cooking wine for about 15 minutes.

Prepare the green onion and ginger, and wipe the marinated Jinchang fish dry with kitchen paper.

Put oil in the pot, more than usual for cooking, add Jinchang fish to fry.

Be sure to cover the pot to prevent the oil from splashing out and scalding. Fry on one side until it becomes hard and set, then turn it over and continue to fry the other side.

After frying on the other side for about five minutes, put the green onion and ginger in a pot on one side, do not turn the fish, so as not to stick the skin.

Add the right amount of salt, light soy sauce, cooking wine, sugar and water. The amount of water is just below the fish.

Bring to a boil and simmer for about ten minutes, then collect the juice over high heat.

Finished product.
