Braised Hare Meat

After the rabbit is cleaned up, cut the rabbit meat into appropriate size pieces, soak in clean water for 20 minutes, soak the blood in the meat, and remove it.

Boil a pot of boiling water, blanch the soaked rabbit meat to remove dirt and impurities, remove it and drain

Cut the green onion and ginger into slices, put the star anise and pepper in the seasoning box

Put the rabbit meat in the pressure cooker, add green onion and ginger, seasoning box, pour in a small half cup of white wine, add 1 tablespoon of dark soy sauce, a little vinegar, and a little sugar to taste

Simmer in the pressure cooker for about half an hour, turn off the heat and wait for the air to be released, then turn on the pan, add appropriate amount of salt and light soy sauce, sprinkle in the coriander and it will be out of the pan.
