Braised Intestines Southern Fujian Cuisine

Buy a set of pig small intestine, or you can buy it on demand.

Use salt, rice vinegar, and balsamic vinegar to scrub repeatedly, then rinse and soak with plenty of water, repeat several times until the peculiar smell disappears.

Cut the small intestine into 80 cm long sections, then turn the small intestine over with chopsticks, and clean the inside of the intestinal wall using the same method as above.

Use chopsticks to hold one end of the small intestine, so that the other end is all over the chopsticks, wrap the small intestine into a ring, and tighten it repeatedly, just like a greedy snake eating itself!

The set small intestine is fixed with toothpicks.

Put the set of small intestine into the ginger sliced water and cook on a slow fire. The rapid fire will easily cause the intestinal gas to burst!

Put the cooked semi-finished product in the dish, and after cooling, pull out the toothpick, and prepare to be scalded by the spouting soup while it is hot! 😊

Add all the dry ingredients, add the fried sugar color, and simmer for one hour.

After cooking, it can be decorated a little, or cut into sections and fried with other vegetables!
Tips:
The small intestine must be cleaned thoroughly. Rice vinegar and balsamic vinegar are used to remove peculiar smells. Do not add them when cooking. Preliminary copying of water is for deodorizing, skimming, and shaping. When using sugar, you must pay attention to the amount. If the amount is large, it will turn black with the increase of the oxidation time. I use too much and it will turn brown!
